The principal behind sundials is simple. As the Earth rotates, the sun
appears to move across the sky. The shadow of a gnomon placed parallel to the
Earth's axis and pointing toward the celestial pole will move around itself in
accordance to the sun's movement.
The sun travels 15 degrees westwards every hour, the gnomon's shadow on the
sundial plate moves at the same rate. You read the time on sundial by noting the
hour line closest to the edge of the shadow.
